Watch nature and plan for picking accordingly or the birds may eat all of your berries. Alternatively, on a very hot summer, let them quench their thirst.
Not only can fruit be frozen to be processed when convenient, but semi-finished products like a raspberry puree can be too. It saves space in the freezer and allows to split jam-making time.
I am proposing a generic jam recipe reduced to the essentials, applicable to all sorts of fruit. A few jars can easily be made while cooking lunch or dinner.
A conversation at the local market, a professional relationship which turned into friendship and the will to use rather than waste made the story of this jam.
Two important elements for the success of a local fruit initiative: have a property where own fruit trees can be taken care of, and a community effort. Two articles in yesterday’s Wimbledon Guardian illustrated this perfectly.
It took twenty minutes to cook a kilo of them and prepare three different desserts, including an original combination with medlar jam and cream. Photos and full details below.
